Speedy family meal: Baked cheesy rice with tuna and vegetables (30 mins)

If the thought of putting together a very quick and tasty 30 minute meal rocks your boat, here's one that I created during the week that TOTALLY knocked the socks off my family. It only has 5 ingredients! They devoured it with gusto! ... and begged for seconds!


Cheesy Brown Rice with Tuna and Vegetables
(serves 4 adults and 4 toddlers)

1 x large packet of microwavable cooked brown rice
180g of tinned tuna in water
1 tin of campbells mushroom soup
1 cup of shredded cheddar cheese
2 cups of frozen peas and corn

  1. Pre-heat oven to 180C (fan forced)
  2. In a square baking tray, spray oil over the surface.
  3. In a large mixing bowl, add all the ingredients and leave 1/4 cup of cheese for later. Mix well.
  4. Put the well-combined mixture into the baking tray and top it with 1/4 cup of cheese that you have set aside.
  5. Bake it in the oven for 20 minutes.
  6. Serve it on its own or with side salad.
Tips: 
* This meal can be reheated in the microwave.
* This meal is great as a vegetarian option by omitting the tuna.
